I think it’s important to try new things, expand the list of food your family eats in order to incorporate more healthy things into everyone’s diet. There are superfoods we keep hearing about…but they might sound kind of scary, especially if you have never cooked them before!
Braised Kale (or any leafy green)
1-2 tbsp. olive oil
1-2 cloves garlic, sliced
1 small onion, sliced into thin rounds
1 small apple (I like granny smith) washed, cored, cut into half-moon slices (peel if you want)
1 – 1 1/2 pounds kale, washed, coarse stems cut away, leaves cut into bite sized pieces
1/2 c. chicken or vegetable stock (reduced sodium – ALWAYS!!)
1-2 tbsp. apple cider vinegar (any vinegar will work)
1/2 -1 tsp. red pepper flakes
salt and pepper to taste
Heat olive oil in skillet. Add garlic, onion, and apples. Saute until lightly browned and softened. Add kale to skillet and sautee for a minute, making sure it’s dry and let it brown just a bit. Decrease heat to medium. Add stock, vinegar, red pepper flakes and salt and pepper. Cover and let simmer for 4-5 minutes, check and stir. Continue cooking with the cover off until kale is tender. Add water or more stock if needed.
